My one year old is such a picky eater, HELP!

whatever you do, don't make mealtime a battleground. this will only make your situation worse, and frustrate the hell out of you and her. most todlers are picky at this age. let her play with her food. what's the harm in that? continue to offer new foods, even when you think she may not like them. let her see you eat a variety, and she may be willing to try something new! the best thing is to try, try, try again. a lot of times, they grow out of it. good luck.
