Chewy Molasses Oatmeal Cookies

Chewy Molasses Oatmeal

1/2 cup vegetable oil
1 cup sugar
2 eggs
1/3 cup molasses
2 cup quick oats
2 cup all-purpose flour
1/2 tsp salt (optional)
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 cup pecans, chopped
1 cup raisins
1/4 cup sugar, for rolling (or more as needed)

Yield: approximately 50 cookies

1. Preheat oven to 350 degrees.

2. In a mixing bowl combine oil, sugar, eggs and molasses, then set aside.

3. Combine remaining dry ingredients in a separate mixing bowl (oats, flour, salt, baking soda, baking powder, cinnamon, pecans and raisins).

4. Pour wet ingredients into dry ingredients and combine. (Dough will be thick.)

5. Using your hands, form into small balls (the size of a small radish), and roll in sugar.

6. Place on 18" x 13" x 1" cookie sheet, either greased or lined with a silpat

7. Bake at 350 degrees for 10 minutes.
