Chocolate Peanut Butter Cup Cookies

"These make great gifts for babysitters and pediatrician office staff!"

Ingredients
1 cup butter, softened
3/4 cup creamy peanut butter
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla extract
2 1/3 cups all-purpose flour
1/3 cup cocoa powder
1 tsp baking soda
1 cup semisweet chocolate chips
1 cup peanut butter chips
1 (16 oz) bag miniature Reese's peanut butter cups, cut into quarters













Yield: 3 dozen cookies

Directions:
1. Combine the quartered peanut butter cups, chocolate chips, and peanut butter chips in a freezer bag and freeze for at least an hour. This will keep them from melting during baking and you'll have big chunks of chocolate and peanut butter to bite into.

2. Preheat oven to 350 degrees F.

3. In a medium bowl, combine the flour, cocoa powder, and baking soda; set aside.

4. In a large bowl, mix the butter, peanut butter, white sugar, and brown sugar until smooth.

5. Beat in the eggs one at a time, then stir in the vanilla.

6. Gradually add in the flour mixture. Fold in the chocolate chips, peanut butter chips, and peanut butter cups.

7. Drop by spoonfulls onto an ungreased cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Be sure to let them cool on the pan for 1 or 2 minutes before removing them to a wire rack to cool completely or they will break apart.
