Chocolate Peanut Butter Gluten-Free Cookies

Ingredients:
1 cup chunky peanut butter
1 cup light brown sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon vanilla (gluten-free vanilla if you have sensitivities to gluten)
1 cup semi-sweet chocolate chips







Yield: one dozen cookies

Directions

1. Beat brown sugar, egg, baking soda, and vanilla together until well mixed.

2. Beat in peanut butter.

3. Stir in chocolate chips.

4. Drop by spoonfulls on baking sheet (a baking stone makes it even better).

5. Bake at 350 degrees for 20 to 25 minutes or until lightly browned.

6. Remove from oven and allow to cool for 15 minutes before transferring to a cooling rack. Because of the high content of peanut butter , these cookies will not "set" and they will seem uncooked until they have had a chance to cool.
