Ingredients:
For dough:
2-1/2 cups flour
1 teaspoon baking soda
1-1/2 teaspoons cream of tartar
1-1/2 cup confectioners sugar
1 cup butter
1 egg
1 teaspoon vanilla
For filling:
1 cup brown sugar
2/3 cup flour
1 teaspoon cinnamon
1/2 cup butter, softened
For the glaze:
1-1/2 cups confectioners sugar
2 tablespoons milk
1/2 teaspoon vanilla
Directions:
1. Combine flour, baking soda and cream of tartar in a medium bowl. In a large mixing bowl, cream confectioners sugar and butter with an electric mixer. Beat in egg and vanilla. Gradually beat in flour mixture; beat just until combined.
2. Wrap dough in plastic wrap, flatten into a disc shape and refrigerate 1 hour.
3. To make filling, mix brown sugar, flour, cinnamon and butter in a bowl with two forks until crumbly. Remove dough from refrigerator and place on a floured surface. Roll into a large rectangle (about 12 inches x 16 inches). Press cinnamon mixture firmly into dough. Roll dough up tightly and wrap in plastic wrap; refrigerate for 1 hour. (This step makes it much easier to slice cookies.)
4. Preheat oven to 350 degrees. Remove dough from refrigerator and slice into 1/2-inch rounds. Place 2 inches apart on cookie sheet. Bake for 10 -13 minutes or until just golden on the edges. Cool completely.
5. To make glaze, place confectioners sugar in a small bowl. Add milk and vanilla and stir to combine. Pour mixture into a resealable sandwich bag and cut the tip off one corner. Drizzle glaze onto cooled cookies.
