Cookie Recipe: Gooey Caramel Apple Cookies

Meet caramel apples, in cookie form

Enter the 2009 Cookie Bakeoff Bonanza!

Yield: 2-1/2 to 3 dozen cookies

Ingredients:

1/2 cup butter flavored shortening
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon imitation rum extract
1 cup apple preserves
2 cups self rising flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon apple pie spice
15 caramels, each cut into 4 smaller squares









Directions:

1. Preheat the oven to 375 degrees F.
2. Cream together shortening, sugars, egg and rum extract. Mix in apple preserves. Combine flour, baking powder, cinnamon and apple pie spice; stir into shortening mixture until combined. Fold in cut-up caramels.
3. Drop dough by tablespoonfuls onto cookie sheet; bake for 11-13 minutes.
