Easy-as-Pie Apples

Serves: 4 servings

1 cup apple cider or juice
4 large baking apples (like Rome Beauty, Cortland, or McIntosh), pared, cored, and sliced
1/2 cup golden raisins
1/4 teaspoon vanilla extract
A large pinch ground cinnamon or nutmeg

In a large nonstick skillet, heat the cider over medium-high heat until warmed through. Stir in the apples, raisins, vanilla, and cinnamon and cook, occasionally stirring gently, until apples are soft and most of the liquid has evaporated, about 8 to 10 minutes. Serve warm.
