Fruitcake Cookies

Ingredients:
1 cup butter, softened

1 cup brown sugar, packed

1 whole egg and one egg yolk

2 1/4 cups flour

1/2 teaspoon baking powder

1 teaspoon allspice

1/4 teaspoon ginger

1/2 cup chopped candied cherries

1/2 cup chopped candied pineapple

1/2 cup raisins

1/2 cup chopped pecans












[BOLD {Yield:}] 3 dozen

Directions:
1. Preheat oven to 350 degrees.

2. Beat butter and sugar with electric mixer until fluffy. Add egg and egg yolk.

3. Combine flour, baking powder, allspice and ginger and mix well with butter, sugar, and eggs.

4. Mix in cherries, pineapple, raisins and pecans with a wooden spoon.

5. Drop by tablespoons onto parchment lined baking sheets.

6. Flatten slightly, or cookies will not spread.

7. Bake for 14 minutes.
