Grilled Chicken, Apple, and Cheddar Wrap

By Patricia Carolan

Prep time: 15 minutes
Cook time: 10 minutes
Serves: 4 servings

4 large (burrito style) low-fat flour tortillas
4 Tbs reduced-fat sour cream
2 Tbs spicy brown, or your favorite, mustard
1/4 tsp dried, ground rosemary
2 cups chopped cooked chicken (2 large breast halves)
1 medium Granny Smith apple, unpeeled, quartered, cored,
and cut crosswise into thin slices
1 cup shredded reduced-fat sharp cheddar cheese
Fruit salsa or chutney, optional

Mix together sour cream, mustard, and rosemary, and spread on tortillas; top with chicken, apples, and cheese. Older kids can help roll the wraps.

1. Preheat oven to 350 degrees. Heat tortillas until warm and soft (check the package for directions); cover with foil to keep warm and set aside.

2. In a small bowl, combine sour cream, mustard, and rosemary; spread equal amounts on each tortilla.

3. Top tortillas with equal amounts of chopped chicken, apple slices, and sharp cheddar cheese; wrap tightly and place seam-side down in a shallow baking dish or on a rimmed cookie sheet. Bake for 10 minutes, or until cheese is melted. Serve with fruit salsa or chutney on the side, if desired.
