Mexican Pita Pizza

Easy and quick way to make delicious pizza

Total time: 35 minutes

Serves: 4

Cooking spray

1 lb lean ground turkey breast

1/2 cup shredded cheddar cheese

1/2 cup shredded monterey jack cheese

1/2 cup finely chopped red onion

1/2 cup chopped red bell pepper

1/2 cup chopped tomatoes

1 clove garlic, minced

1/2 tsp chili powder

1/2 tsp ground cumin

1/2 tsp salt

1/4 tsp ground black pepper

4 whole-wheat pita breads

1. Place a rack in lower third of oven; preheat to 425°F. Coat a baking sheet with cooking spray.

2. In a large bowl, mix together all ingredients except the pita until thoroughly combined.

3. Divide turkey mixture among the pita breads, and spread evenly over each one.

4. Bake until turkey is thoroughly cooked and the top is golden, about 20 minutes. Serve with scallions, sour cream, or lime wedges, as desired.

Picky-eater pleaser: If your kid doesn't like the veggies mixed in, you can leave out the onion and pepper.
