Mint Julep Sticks

Keep this crisp, refreshing ice pop recipe G-rated or add a splash of bourbon for a grown-up twist

Ingredients

  • 1 1/3 cups sugar
  • 4 Tbsp mint leaves, finely chopped

Serves 6

In a saucepan, combine 1 1/3 cups sugar with 2 1/2 cups cold water. Heat, stirring constantly, until the sugar has dissolved. Bring to a boil for 1 to 2 minutes; remove from heat and stir in 4 Tbsp finely chopped mint leaves. Set aside to cool. Strain and pour mixture into ice-pop molds (we used a silicone mini-muffin pan, but you can also use small paper cups). Insert an ice-pop stick into each and freeze for 3 to 4 hours, or until solid.

Tip: Turn these into an authentic adult-friendly mint julep by adding 1 Tbsp bourbon to the mixture before pouring into the ice-pop molds. Cheers!
