PB&J Ice Cream Sandwiches

Yield: 8 servings 
  • 8 tsp strawberry jam
  • 16 soft peanut butter cookies
  • 1 pint vanilla ice cream, softened slightly
  1. Spread 1 teaspoon jam onto bottoms of 8 cookies.
  2. Spread 1/4 cup ice cream each onto bottoms of plain cookies. Top with jam-spread cookies. Work quickly to avoid melting ice cream, then wrap sandwiches tightly in plastic and freeze 6 hours.
