Picky Eater Meal: Classic Cobb Salad with Chicken

A picky-eater pleasing chicken cobb salad recipe

Create a bona fide grown-up salad from ingredients that are individually appealing to kids. Just be sure to plate all the ingredients clustered together (and free of salad dressing) in the middle of the table so the kids can pick and choose what they want.

Prep time: 20 minutes

Total time: 30 minutes

Serves: 4

For the Dressing:

2 Tbsp red-wine vinegar

1 Tbsp chopped fresh chives

1 tsp Dijon mustard

Salt to taste

Pepper to taste

1/2 cup extra-virgin olive oil

For the Salad:

2 to 3 cooked chicken breasts, sliced

4 to 5 chicken fingers (your child's favorite brand)

1 bag mixed greens

3 hard-boiled eggs, sliced

5 slices cooked bacon, chopped

1 avocado, peeled and diced

2 handfuls cherry tomatoes, halved

1/4 cup crumbled blue cheese

Directions:

  1. Make the dressing by whisking together all of the ingredients.

  2. Arrange the salad ingredients on a large platter. Serve dressing on the side.
