Pineapple-Cherry Bars

Pineapple Cherry Bars
* 2 cups all-purpose flour
* 1 cup packed brown sugar
* 1/2 teaspoon salt
* 1 cup margarine
* 1/2 cup granulated sugar
* 2 tablespoons cornstarch
* 8 oz can crushed pineapple
* 2 beaten egg yolks
* 1 cup chopped maraschino cherries

Yield: about 24 bar cookies

1. Combine the flour, brown sugar, and salt. Cut in the margarine until crumbly. Set aside 1 cup of this mixture.

2. Press the rest of the mixture into the bottom of a 9 x 13 pan. Bake at 350 degrees for 15 minutes, then let cool.

3. In a saucepan, combine the sugar and cornstarch. Stir in the undrained pineapple and egg yolks. Cook and stir over medium heat until thickened and bubbly.

4. Remove the pan from heat and stir in the cherries. Spread the pineapple and cherry mixture evenly over the crust in the pan. Sprinkle the reserved crumb mixture over the top.

5. Bake at 350 degrees for 30 minutes. Place on a wire rack and allow to cool completely, then cut into bars.
