Prosciutto Panini

Yield: 4 servings

  • 8 slices Italian bread
  • 1/4 cup red-wine vinaigrette
  • 8 slices (about 8 oz) mozzarella
  • 1 large tomato, cut into 8 slices
  • 4 oz prosciutto (8 thin slices)

1. Preheat an indoor grill, panini press, or grill pan.

2. Meanwhile, brush each slice of bread with about 1/2 tablespoon vinaigrette. Layer 2 slices each cheese, tomato, and prosciutto on 4 slices of the prepared bread. Top with remaining bread.

3. Place sandwiches on grill, cover, and cook 3 to 4 minutes, until cheese is melted.

Per serving: 345 calories, 14 g fat (6 g saturated), 1,160 mg sodium, 48 mg cholesterol.
