Sloppy Joes

Prep time: 10 minutes

Cook time: 20 to 22 minutes

Yield: 6 servings

1 lb lean ground beef

1 small onion, chopped

1 small zucchini, finely chopped

1 medium red bell pepper, finely diced

16-oz jar mild salsa

6 rolls, split and toasted

1. In a large nonstick skillet, saut¿¿ the beef, onion, zucchini, and red pepper for 5 minutes or until the meat is browned. Cover, reduce the heat to low, and cook for 7 minutes, until the vegetables are soft.

2. Stir in the salsa. Bring to a boil, turn heat to low, and simmer, uncovered, for 8 minutes. When most of the liquid has evaporated, it's done.

3. Spoon 3/4 cup meat mixture onto each bun and serve immediately.
