
4 cups flour
1 tsp salt
1 1/2 cups butter, softened
1 cup sugar
4 tsp vanilla extract
2 eggs
1 12-oz bag of semi-sweet chocolate chips
crushed walnuts (optional)
approx. 2 cups confectioner's sugar (in a bowl with tight lid)
Yield: about 48 cookies (4 dozen)
1. Preheat oven to 375 degrees. In a medium bowl, sift together flour and salt, set aside.
2. In a separate mixing bowl, blend together butter and sugar. Beat in eggs and vanilla until batter is less grainy and more creamy.
3. Gradually stir in flour mixture. Batter will be very thick -- you may want to use your hands to blend mixture. Add chocolate chips (and walnuts) and mix so chips are evenly disbursed throughout batter. Use your hands to make 1-1/2 to 2-inch balls, and place on cookie sheet, about 1/2-inch apart.
4. Bake for 8 - 10 minutes at 375 degrees, until bottoms are slightly brown. Let cool completely on a separate cooling rack.
5. Place 3 or 4 cookies inside the bowl of confectioner's sugar, and shake until well coated. Repeat with all cookies until all are coated.
