1/2 cup butter (1 stick)
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 egg, lightly whipped
1 cup sour cream
1/2 tsp vanilla extract
3/4 cup semisweet chocolate chips

1. Preheat the oven to 400 degrees. Spray 12 muffin cups, or use liners, and set aside. Melt the butter in a small saucepan over low heat.
2. In a large bowl, sift the flour, sugar, and baking powder. Add the whisked egg, sour cream, and melted butter; stir until smooth. Add the vanilla extract and chocolate chips and stir well.
3. Spoon about 1/4 cup batter into each muffin cup. Bake on the middle shelf for 22 minutes, or until just golden brown and a toothpick inserted in the center comes out clean.
