Steamed Salmon and Rainbow Vegetables
* One 4-6-ounce salmon fillet
* 1 cup broccoli florets
* 1/4 sweet potato, peeled and cut into matchstick-size pieces
* 1/2 beet, peeled and cut into matchstick-size pieces
* 5 mushrooms, cut in half
Makes 1 serving
Lightly oil a steamer basket. Set the basket in a large saucepan with water just lower than the basket. Add salmon and surround with broccoli, sweet potato, beet and mushrooms. Season with salt and pepper. Place over high heat, cover, and steam for 10-12 minutes, or until cooked through.
