Stir-fried Green Beans With Ground Beef

Cook time: 9 minutes
Serves: 4 servings

1 tsp canola oil
1 clove garlic, finely chopped
2 tsp chopped fresh ginger, or 1 teaspoon powdered ginger
1/2 lb extra lean ground beef
1 lb green beans, ends trimmed
1 cup cubed ripe tomatoes, optional
1 1/2 Tbs soy sauce or tamari
About 1 1/2 Tbs water
Chinese chile paste, or hot pepper sauce, optional

1. Heat oil in a wok or a large skillet over moderately high heat. Add the garlic and the ginger; cook for 1 minute, stirring frequently.

2. Add beef and saute for 5 minutes; stir frequently to prevent burning.

3. Add beans, tomatoes (if desired), and 1 tablespoon each of soy sauce and water; cook for 3 minutes, or until beans are slightly tender.

4. For more sauce, add more soy sauce and water. Add the chile paste or the hot pepper sauce (if desired).

per serving (1 cup): 181 calories, 11 g fat (4 g saturated), 387 mg sodium, 39 mg cholesterol. Rich in vitamin B12 and zinc, which fights infection.
