Two 18-ounce jars apricot preserves
One 12-ounce jar Dijon mustard
3 pounds boneless, skinless chicken breasts
Yields 4 to 6 servings.
Preheat the oven to 350 degrees.
In a large bowl, combine the apricot preserves and the mustard. (If you want this to be less spicy, add less mustard.)
Cut the chicken breasts into strips about 2 inches wide and add to the apricot mixture. Generously coat the chicken.
Pour the chicken and the sauce into a baking dish and cook for about 45 minutes.
