MAKES 4 ADULT SERVINGS OR 6 TO 8 KID SERVINGS
In a large saucepan, melt 1 Tbsp butter over medium heat. Add 3 peaches, cut into chunks, and cook until they release some of their juices, about 5 minutes. Stir in 1 cup rice. Add 2 cups apple juice, 1 cup milk, 1/2 cup coconut milk, 1 cinnamon stick, 1 tsp vanilla, and a pinch of salt and bring to a boil. Reduce heat to medium, cover, and cook until the rice is tender and most of the liquid is absorbed, about 20 minutes. Discard the cinnamon stick and fold in 2 Tbsp sugar. Serve warm or cold.
