Whole-Wheat Banana Pancakes With Berry Sauce

Serves 4

Takes less than 20 minutes

  1. Sauce: Purée 2 cups fresh or thawed mixed berries with 1/4 cup sugar; set aside.
  2. Whisk together 1 mashed ripe banana, 1 cup milk, 1 Tbsp melted butter, and 1 large egg until smooth. Stir in 1 cup whole-wheat pancake mix until moistened.
  3. Drop silver-dollar spoonfuls of batter onto a preheated lightly buttered griddle. Cook 2 to 3 minutes per side. Drizzle berry sauce on top. Serve with turkey bacon.

Get the kids in on the action: Have them mash the banana and whisk the wet ingredients.

Picky-eater pleaser: Call the pancakes “cookies” and let them eat them like that. Provide the berry sauce for dipping.
