Dinner Tonight, Lunch Tomorrow: Meatless Monday
March 25, 2013
Did you know that eating meatless just once per week has serious health benefits (like reducing risk for cancer and diabetes) for you and your family, plus it reduces your carbon footprint significantly over time (so it's healthy for the earth, too!). We love this hearty Vegetable Lasagna recipe that's still cheesy and hearty without the cholesterol and saturated fat that comes with meat.
Grill up leftover veggies (or roast them if it's too cold to light the grill or if you don't have a grill pan) and make this yummy dip for the kids to take to school the next day. Who doesn't love dipping? It makes everything taste better.
