Dinner Tonight, Lunch Tomorrow: One-Pot Recipes

Who doesn't love a good one-pot meal? Not only are they usually super hearty and filling (and balanced to boot!), but they're also a cinch to clean up since, by definition, they're made in just one pot. We love this chicken, veggies and rice dish from celeb chef Tyler Florence. It's full of simple, inexpensive ingredients that please crowds and picky eaters, and is an easy meal for babies starting solids. Just leave out the salt and throw a bit in the blender for baby. The rest of the family can add a little salt as needed.

Any extra veggies or chicken pieces are prime game for lunches in the AM, but whip up this yummy lemon dill dip to make them into instant finger food, which always makes healthy eating more fun. I'm almost 30 years old, and I still eat some veggies with my fingers -- especially green beans and asparagus. Shh...don't tell my mom.
