Dinner Tonight, Lunch Tomorrow: Waffles

My latest food obsession: waffles. I'm completely serious. I've been putting everything and anything in my waffle iron just to see what happens and what new combinations I can make. Last week, I made a hash brown waffle (with thawed, storebought, bagged hashbrowns!), and topped it with avocado, a fried egg, tomatoes, black beans and salsa. Hello, breakfast-for-dinner! I just love it.
If you don't have a waffle iron, you can still make some pretty awesome and creative dishes with storebought waffles. Just make sure to leave them in the toaster or toaster oven long enough that they get nice and crispy. Slap another waffle on top, and you've got a sandwich, or leave it open-faced for a less strachy treat. Some of my favorite toppings:
Huevos Rancheros — scrambled eggs, Canadian bacon, salsa, shredded Jack cheese
Sweet & Salty — Cream cheese, strawberry jam, turkey slices
Pizza Mia — Tomato sauce, mozzarella cheese, veggies, turkey pepperoni
If you've got a toddler (or a kid who just really likes things miniature), make slider versions using mini waffles (I like Eggo's version when thin and crispy is the order of the day, and the Van's whole-grain minis when nutrition is paramount).
