This white chili, made with lean ground chicken, white beans, and spinach, is a lighter take on classic chili con carne--perfect for warmer spring days. Kids can help you drain and rinse the beans, plus pick out their own garnishes (sour cream, diced avocado, shredded cheese, etc.).
The chili tastes even better when reheated the next day, so it'll make a great lunch packed in a Thermos along with crackers or a piece of cornbread for dunking.
