The “Minis” chapter is quite possibly my favorite chapter in Baby & Toddler On The Go. The whole idea is that most of these can be made in a mini or regular muffin pan (depending on ages and appetites) and they are almost all entire meals in one. Frittata bites, mini mac and cheese bites, little baby quiches, salmon cakes and lentil cakes, mini meatballs, and even tiny baked arancini rice balls are easy to make and easy to transport, no matter where you're going. Plus, once you get the hang of making these recipes, you can customize them with whatever you have in your fridge!
Mini Turkey Meat Loaves
You can make these little meat loaves even more nourishing by adding shredded zucchini or chopped sautéed spinach. If you and your toddler are on the go, these mini loaves provide the perfect hit of protein when hunger strikes. Plus, they travel easily along with roasted or steamed vegetables and cucumber-yogurt dip for a complete meal.

Spinach & Cheese Frittata Bites
Frittatas are great because you can put almost anything into them and make them delicious. This recipe is just a starting point. Try any kind of shredded or chopped cooked vegetables, chopped meat or poultry, and whatever melting cheese you might have on hand. It’s the best, most tasty way you can use up what you have in the fridge.

Veggie Spice Muffins
These bite-sized muffins are loaded with healthful ingredients—whole-wheat flour, wheat bran, shredded carrot or zucchini, yogurt, applesauce—to fuel your toddler’s afternoon playtime. Here, I’ve added just enough cinnamon and ginger to the batter to delight your little one’s palate without overwhelming it.
