Bite-Sized Bread Bowls and Fillings

Pint-size party food that packs a delicious punch

1. Prepare Biscuit Bowls
makes 8
Preheat oven to 350°F. Spray a muffin pan with nonstick cooking spray. Using one 10-oz can refrigerated biscuits, place 1 biscuit in each muffin cup; firmly press down with fingers in middle to the bottom and up the sides, forming 1/4-inch rims. Bake until biscuits are browned, about 15 minutes. Allow to cool in pan for 5 minutes.
2. Add Fillings
Pulled-pork bowls:
Fill each biscuit bowl with 1/4 cup store-bought barbecue pulled pork. Top with chopped green onions, 1/2 Tbsp shredded cheddar cheese, and, if desired, a pickle slice.
Mini-quiche bowls:
Preheat oven to 400°F. In a bowl, whisk together 6 eggs, 1/2 cup finely chopped green bell pepper, 1/2 cup finely chopped onion, and 1/4 cup shredded cheddar cheese. Place pre-cooked biscuit bowls on a cookie sheet, and divide egg mixture evenly among them (about 1/4 cup each). Bake until a toothpick inserted in center comes out clean, about 30 minutes. Let cool 10 minutes before serving.
Loaded chili bowls:
Fill each biscuit bowl with 1/4 cup of your favorite low-fat chili. Top with 1/2 Tbsp each sour cream and chopped green onions.
