2 Egg Recipes from Our Best Bites

“I always have eggs for quick and easy meals I know my three young sons will love," says Sara Wells, co-blogger for the family foodie site Our Best Bites. She shares the two recipes she swears by for fueling her three kids:

1 I'll scoop out baked potatoes, crack an egg inside the skins, and top with shredded cheese, crumbled bacon, and diced veggies, then bake for 20 minutes.

2 Or for a healthy twist on mini-quiche, I line a muffin tin with sliced deli ham and pour in beaten eggs mixed with cheese, diced red peppers, and chopped spinach, then bake for 15 to 20 minutes. The ham creates an edible serving container for the egg cups, and my kids rarely notice the veggies!
