How about a Mexican theme to spice up these dreary-weather days? For dinner tonight, try this Mexican Rice and Beef recipe. Keep kids busy in the kitchen by letting them wash and dry lettuce, measure the ingredients, fluff rice mixture with fork, and sprinkle the cheese!
For lunch tomorrow, use leftover sour cream and salsa to make Chicken Tortilla wraps. Kids can help by setting tortillas in the sun, placing chicken on the tortillas, putting garnishes into bowls, and rolling up and serving the tortillas.
