For this Japanese-style fondue, paper-thin slices of meat or fish (our own variation), plus vegetables are dipped into boiling water to cook. (Its name comes from the sound of the meat being gently swished in the water.) As the ingredients cook, the water becomes a delicious broth, which can be served as a soup with noodles at the end of the meal.
