Sweet Potato Chips

Crispy, satisfying and nutrient-packed, these chips are a healthy snack or side dish

If you crave something crunchy and comforting, these sweet and meaty chips are positively addictive. They're also loaded with fiber, beta-carotene, and vitamin C.

Prep Time: 10 minutes
Cook Time: about 13 minutes
Yields: 4 servings

Ingredients
1 large sweet potato, peeled and very thinly sliced
2 tablespoons vegetable oil
Salt and freshly ground pepper

1. Preheat the oven to 350 degrees. Brush a very light coating of oil on a baking sheet.
2. Lay the potato slices on the sheet, being careful not to overlap them. Using a pastry brush or the back of a spoon, brush the slices lightly with oil. Sprinkle with salt and pepper, and roast for 8 minutes.
3. Flip the slices with a spatula and brush the other side lightly with oil. Sprinkle with some more salt and pepper. Roast the chips another 5 minutes, or until they are cooked throughout and slightly crispy.
4. Drain well on paper towels.
