Shepherd's Pie

Prep time: 15 minutes Cook time: 35 minutes Serves: About 8 servings Nonstick cooking spray
1 lb ground turkey
Salt and pepper
1/2 tsp dried thyme
One 7.8-oz box instant scalloped potatoes (don't use seasoning packet)
1 1/2 cups low-fat milk
1 cup frozen peas
1 cup frozen corn
1 1/2 cups pre-grated reduced-fat cheddar
16-oz jar light alfredo sauce
Dash paprika 1. Preheat oven to 400 degrees. Coat large skillet with spray; place on medium heat. Brown meat for 5 minutes, or until no longer pink, stirring often. Add salt, pepper, and thyme, and stir.

2. Line the bottom of a 9 x 13-inch casserole with a single layer of potatoes. Pour milk over. Top with peas and corn, then meat, then half the cheese, then sauce. Top with remaining cheese and dash of paprika. Bake on middle rack for 30 minutes, or until golden brown.

How kids can help: Measure and layer ingredients. (1/8 recipe) 265 calories, 14.3 g fat (8 saturated), 563 mg sodium, 74 mg cholesterol.
