Quick Chocolate and Fruit Crepes

Prep time: 10 minutes Cook time: 5 minutes each Serves: 4 servings 4 eight-inch flour tortillas
1 cup chocolate chips
2 ripe, peeled, and very thinly sliced apples, peaches, pears; or 1 cup mixed berries, plus additional fruit for garnish
2 Tbs sugar


Top cooked crepes with berries.
1. Place a large skillet over moderate heat. Put one tortilla in the skillet and heat for 1 minute. Flip the tortilla, and sprinkle it with one-quarter of the chips and one-quarter of the fruit; heat 3 to 4 minutes, or until chocolate melts, spinning the tortilla frequently to make sure it doesn't stick to the pan.

2. Just before the crepe is done, sprinkle on 1/2 tablespoon of the sugar. Fold the tortilla in half and remove from heat. Let cool for a minute; the chocolate tends to be very hot. Repeat with remaining tortillas, chocolate, fruit, and sugar. Sprinkle each with berries; serve. per serving (1 crepe): 209 calories, 8 g fat (4 g saturated), 127 mg sodium, 0 mg cholesterol.
