Sour Cream-Chocolate Chip Muffins

Prep time: 15 minutes Cook time: BAKING TIME: 22 minutes Serves: 12 muffins Nonstick cooking spray
1/2 cup butter (1 stick)
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 egg, lightly whipped
1 cup sour cream
1/2 tsp vanilla extract
3/4 cup semisweet chocolate chips


Let your child help you measure ingredients, mix the batter, and fill the muffin tins.
1. Preheat the oven to 400 degrees. Spray 12 muffin cups, or use liners, and set aside. Melt the butter in a small saucepan over low heat.

2. In a large bowl, sift the flour, sugar, and baking powder. Add the whisked egg, sour cream, and melted butter; stir until smooth. Add the vanilla extract and chocolate chips and stir well.

3. Spoon about 1/4 cup batter into each muffin cup. Bake on the middle shelf for 22 minutes, or until just golden brown and a toothpick inserted in the center comes out clean. per serving (1 muffin): 271 calories, 15 g fat (9.1 g saturated), 99 mg sodium, 49 mg cholesterol.
