Grab an extra box and whip up these tasty (and fast!) dishes. Use the crumbled, not cubed kind.
A little of this, a little of that-how do you stretch those leftovers? Besides putting them in a stir-fry or spiffing up canned soup, try the following:

If you have: LEFTOVER MEAT/CHICKEN + veggies
You can make: Pizza Presto
How to: Top prebaked crust (like Boboli) or tortillas with pizza sauce or pesto, shredded part-skim mozzarella cheese, chopped chicken or meat, and veggies; bake until crisp and cheese melts.

If you have: LEFTOVER MEAT/CHICKEN + potatoes
You can make: Heavenly Hash
How to: Combine chopped baked potatoes with chopped chicken/meat, seasonings, diced onion, green pepper and a shake or two of Worcestershire sauce; transfer to a baking dish and bake until heated through; if too dry, stir in some leftover gravy or broth.

If you have: LEFTOVER POTATOES/PASTA + veggies
You can make: Frittata
How to: Spritz a baking dish with cooking spray; add pasta or homefries, sauteed onion, vegetables, shredded cheese, and eggs whisked with seasoning; top with sliced plum tomatoes; bake until cooked through.

If you have: LEFTOVER RICE + veggies
You can make: "Fried" Rice
How to: Saute chopped scallions; add rice, vegetables, soy sauce; stir/cook until heated through.

If you have: LEFTOVER VEGETABLES
You can make: Stuffed Potatoes
How to: Slit baked potatoes lengthwise and loosen it with fork; top with veggies mixed with ranch salad dressing, add shredded cheese; return to oven until veggies are heated and cheese is melted.
