Best-Ever Oatmeal Cookies

Prep time: 10 Minutes Cook time: 12 Minutes Serves: 42 cookies 1 cup brown sugar
1 cup white sugar
1 cup (2 sticks) butter or margarine
1/2 tsp vanilla extract
1/2 tsp almond extract
2 eggs
2 cups quick-cooking oatmeal
1 tsp baking soda
2 cups flour

The fourth generation has gotten into the act: "I hand Kennedy (my daughter) the measuring cup and she helps scoop the ingredients, dumps them into the bowl, and mixes with a wooden spoon."

1. Preheat oven to 350 degrees. Cream both sugars, butter, vanilla, and almond extract in a bowl. Add the eggs and mix.
2. Mix the oatmeal, baking soda, and flour in a separate bowl; add to the butter-and-sugar mixture and stir together.
3. Place the dough by teaspoonfuls onto ungreased baking sheets. Bake about 12 minutes, or until lightly brown around the edges. Cool cookies slightly before removing them from the sheet. (1 cookie): 115 calories, 4.7 g fat (1.3 g saturated), 86 mg sodium, 10 mg cholesterol.
