Fruit Salsa with Baked Cinnamon Chips

Adding basil to the fruit may seem strange, but it actually complements the sweetness of the fruit and the cinnamon in the chips. It’s just one of those things you have to try to believe it!

Makes 4 cups

Fruit Salsa

•Juice of 1 lime

•2 tablespoons granulated sugar

•½  teaspoon ground cinnamon

•4 fresh basil leaves, chopped

•1 kiwi, peeled and cut into ¼ - inch dice

•1 crisp apple, peeled, cored, and cut into ¼ - inch dice

•1 cup strawberries, hulled and cut into ¼ - inch dice

Oatmeal Snack Cakes

  • 1/2 cup butter, room temperature
  • 1/2 cup shortening
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 3 Tbsp boiling water
  • 1/2 tsp baking soda
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 cups rolled oats, pulsed several times in a food processor
  • 1/4 tsp salt

Cream together the butter, shortening and sugars. Put the boiling water in a cup and add the baking soda to it and then add to the butter and sugar mixture. Beat well and then add the rest of the ingredients.
