Cookie Recipe: Caramel and Chocolate-Filled Cookies


1/2 cup butter (softened)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Dash of salt
1 tsp. vanilla
1-3/4 to 2 cups flour
1 bag Rolo candies (unwrapped)
1 bag Guittard Chocolate Chips
1 bag Heath English Toffee Chips


1. Cream butter and sugars. Add egg and mix well. Add soda, baking powder, salt and vanilla -- mix well. Add flour until a good consistency -- the dough should be firm and not too sticky. Wrap a small ball of dough around the Rolo so that the candy is completely inside of the dough.  Bake at 350 degrees on ungreased cookie sheet for 8-10 minutes until lightly golden.

2. When cookies have cooled, melt chocolate chips and dip cookies. Put on wax paper and sprinkle the chocolate with toffee chips. Refrigerate for 30 minutes or until chocolate has hardened. Enjoy!

Yield: 2 dozen cookies
