Vegetable Bow-Tie Pasta Salad

Serves 4 to 6 - Ready in 30 minutes!

Sauteed Veggies

Heat a large pan with 1 Tbsp vegetable oil over high heat. Add 2 thinly sliced carrots and stir-fry for 2 minutes. Add 2 seeded and chopped bell peppers and cook for another 2 to 3 minutes. Add 1/2 bunch rouhgly chopped dino kale. Continue with pasta salad recipe. Use these sauteed veggies to make chicken tortilla soup and chicken and vegetable stir-fry, too.

Pasta Salad

Cook the veggies until just tender, then toss with 3/4 lb cooked bow-tie pasta, 1 cup quartered cherry tomatoes, 4 to 6 oz shredded or cubed mozzarella or feta, and 1/2 cup of your fave Italian dressing. Season with salt and pepper. Serve warm or chilled. Optional: Add cubed chicken or turkey from the deli.
