Turn one Sunday dish into three days of family faves for a real weeknight time-saver.
Cook on Sunday: SLOW-COOKER PORK TENDERLOIN
Cook tenderloin, onion soup mix, 1 cup water, 3/4 cup red wine, 3 Tbsp garlic, and 3 Tbsp soy sauce on low 4 hours in a slow cooker.
For Lunch: BBQ WRAP
Shred 1 cup pork tenderloin and stir in 2 Tbsp BBQ sauce. Place in a flour tortilla and top with 1/4 cup bagged coleslaw mix tossed with 1 Tbsp Greek yogurt.
For Dinner: MOO SHU PORK
Stir-fry shredded pork tenderloin, coleslaw mix, and peas in 1 Tbsp oil until browned. Drizzle with hoisin sauce and serve with flour tortillas.
For Lunch: CUBAN SANDWICH
Spread mustard on a split ciabatta roll and pile sliced pork tenderloin, sliced deli ham, sliced provolone cheese, and dill-pickle slices inside.
