Asparagus and Ham Gratin

Asparagus and Ham Gratin

Prep time: 15 minutes
Cook time: 20 minutes
Serves: 4 servings

1 lb asparagus, trimmed
1 Tbs butter
1 tsp olive or
vegetable oil
1 clove garlic, finely chopped
About 1/3 lb smoked ham or prosciutto, sliced very thinly
Freshly ground black pepper
3 Tbs grated parmesan cheese

Roll up the asparagus; place bundles in dish.

1. Bring about 1/2 inch water to a rolling boil in a skillet. Add asparagus, reduce to medium heat, and cook 5 to 6 minutes, or until almost tender when pierced with a small, sharp knife. Drain, then rinse asparagus under cold water to stop the cooking. Drain and set aside.

2. In a small saucepan, melt butter and oil over medium heat. Add garlic and cook about 2 minutes.

3. Cut each slice of ham in half. Roll 1/2 slice of ham around 2 asparagus spears and place in a large gratin dish or broiler pan. Repeat with remaining asparagus and ham. Drizzle garlic butter over asparagus; sprinkle with pepper. (Up to this point, the recipe can be made up to a day ahead; cover and refrigerate.)

4. Preheat oven to 350 degrees. Bake asparagus for 5 minutes. Dust asparagus with cheese and bake another 5 to 7 minutes, or until cheese is golden and asparagus is tender.
