4 pitas or hamburger buns
Nonstick cooking spray
1/2 cup chopped green pepper
1/2 cup chopped onion
1 cup frozen corn
1 cup julienned roast pork (about 1/2 lb)*
1 cup your favorite bottled barbecue sauce
2 cups torn spinach or leaf lettuce
*Editor’s note: Available precooked in the deli section of most supermarkets.
Measure ingredients and tear spinach. Older kids can open and fill pitas.
1. Heat pitas in a 250-degree oven for 5 minutes. Remove pitas from oven, cover with foil to keep warm, and set aside.
2. In a medium skillet coated with cooking spray, cook pepper and onion over medium heat until soft (approximately 3 minutes). Reduce heat to low.
3. Add corn and pork, and cook for another minute. Add barbecue sauce, and heat for 3 to 5 minutes, or until warm through.
4. Slice a thin strip off the top of each of the pitas and open carefully. Line each pita with 1/4 of the torn spinach and fill with 1/4 of the pork mixture.
PER SERVING (1 sandwich): 361 calories, 6 g fat (1.6 g saturated), 863 mg sodium, 39 mg cholesterol. This is a good source of vitamin K and folic acid.
