Once Thanksgiving is over, but much of that 20-pound turkey is still around. Some easy ways to make the most of the leftovers:

Do-it-yourself tacos
Shred turkey. Add a dash of mild chili powder, a drizzle of olive oil, and heat in microwave. Serve in either soft or hard tacos. Let your family layer on whatever toppings they want: guacamole, cheese, salsa, or veggies. The best part: The kids make their own meal!

Turkey melt
For a kid-friendly lunch, combine turkey slices with shredded carrots, diced grapes, and a dollop each of mayo and mustard. Using an animal-shaped cookie cutter, press out a slice of bread and a cheese slice. Scoop salad onto bread, top with cheese, and place under broiler until melted. The salad can be assembled in advance and stored for up to 48 hours.

Turkey kabobs
Thread 1/4-inch-size chunks of turkey, cheese (like cheddar), and apples, grapes, or pineapple onto skewers. For kids under 7 slide off skewers when serving and serve with a spoonful of cranberry relish.
