There’s a sweet surprise in these chocolate-y, kid-friendly cookies — and they made the finals in our 2009 Cookie Bake-Off Bonanza!
“Below is our secret family recipe for Chocolate Surprise cookies. Our family looks forward to plates of these each season after my yearly baking day with my sister and mom!” –Kimberly Baker
1/2 cup butter
1 cup sugar
1 large egg
1 teaspoon vanilla (Kimberly’s note: “I use real vanilla my mom brings back from Mexico, makes a HUGE difference!”)
1/4 cup milk
1-1/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup Hershey’s cocoa powder
1/2 teaspoon Cinnamon (Kimberly’s note: Penzey’s “Korintje Cassia”, if available)
1/2 a bag or so of large marshmallows- cut in half, lay sticky side down on a plate
1. Preheat your oven to 350 degrees. Cream butter and sugar, add egg and vanilla, mix well. Add all remaining ingredients except marshmallows and mix well.
2. Drop spoonfulls onto lightly sprayed/greased cookie sheet (twelve drops per sheet). Bake for 8 minutes at 350 degrees.
3. Remove quickly and lightly press halved marshmallows sticky side down onto each cookie. Return to oven quickly and bake for additional 1-1/2 to 2 minutes. Remove and cool, then frost with frosting below and your favorite sprinkles.
1 bag of powdered sugar
1 stick of soft butter
1/2 cup of cocoa powder
1 to 2 tablespoons of milk
Directions: Mix all ingredients well until smooth.
