2 Egg Recipes from Our Best Bites

Sara Wells, co-blogger for the family foodie site Our Best Bites, shares the go-to ingredient she swears by for fueling her three kids

“I always have eggs for quick and easy meals I know my three young sons will love," says Sara Wells, co-blogger for the family foodie site Our Best Bites. She shares the two recipes she swears by for fueling her three kids:

1 I'll scoop out baked potatoes, crack an egg inside the skins, and top with shredded cheese, crumbled bacon, and diced veggies, then bake for 20 minutes.

2 Or for a healthy twist on mini-quiche, I line a muffin tin with sliced deli ham and pour in beaten eggs mixed with cheese, diced red peppers, and chopped spinach, then bake for 15 to 20 minutes. The ham creates an edible serving container for the egg cups, and my kids rarely notice the veggies!

Spinach, Tomato, Feta Frittata

Fresh ripe tomatoes, salty feta cheese, and aromatic  oregano  are classic Greek ingredients, and make for a flavorful frittata that is sure to become a family favorite. Delicious warm, the bright flavors of this classic frittata  are just as good at room temperature.

Egg Salad Sandwiches

A creamy egg salad sandwich can transport you straight back to childhood. This version updates the classic for adulthood, with sweet Spanish piquillo peppers, fresh cilantro, and toasty cumin. If you can’t find piquillo peppers, feel free to substitute a roasted red bell pepper.
