Fettuccine Primavera

Serves: 5 SERVINGS

1 lb fettuccine
2 Tbs olive oil
2 scallions, thinly sliced
1 red pepper, thinly sliced
1 clove garlic, minced, optional
2 cups snow peas, trimmed and cut into thin pieces
1 cup frozen peas
1 cup frozen broccoli florets
Salt and freshly ground black pepper
3 Tbs fresh basil, shredded
5 Tbs grated parmesan cheese

Add basil; sprinkle pasta with cheese.

1. Cook the fettuccine (see package directions). Meanwhile, heat a tablespoon of oil over medium heat in a large skillet. Add scallions, pepper, and garlic, if desired, and saute, stirring frequently, for 3 minutes. Add the snow peas, the frozen peas, and the broccoli, and saute another 6 minutes, or until cooked through. Season with salt, pepper, and basil.

2. Toss the cooked fettuccine with the remaining tablespoon of olive oil, and the salt and pepper. Top with the vegetable mixture and toss. Sprinkle with cheese and serve.

PER SERVING (2 1/4 cups): 436 calories, 6 g fat (1.8 g saturated), 160 mg sodium, 4 mg cholesterol. This is a great source of fiber and vitamin C.
