Jack O’Lantern Cookies

Jack O’Lantern Cookies

Yield: 8 cookies
18-oz tube sugar-cookie dough, chilled
1/3 cup peach jam
4 green Fruit Roll-Ups

1. Preheat oven to 350 degrees. Cut dough into 16 1/2-inch slices and place at least 2 inches apart on nonstick baking sheet. Bake about 10 minutes, or until slightly golden at edges.

2. Remove from oven. Use the back of a tablespoon to in-dent top edge of each cookie, forming a pumpkin shape. Cool cookies 15 minutes. Use a knife to carve out eyes and a mouth from 8 cookies. Spread 2 teaspoons jam on the other 8 cookies (bottoms up). Top with carved cookies.

3. Remove wrapper from Fruit Roll-Ups and reroll each tightly into a tube. Cut tubes in half, then fold over to form a pumpkin stalk. Insert stalk between the two cookies.
