5 medium-size potatoes, such as russet or sweet potatoes
Nonstick cooking spray or 1 1/2 tablespoons olive or canola oil
Salt and freshly ground black pepper to taste
Older kids can help cut the potatoes and grease the baking sheet; little ones can place the potatoes on baking sheet and sprinkle with seasonings.
1. Preheat oven to 350 degrees. Cut potatoes in half lengthwise, then slice each half into four long strips, creating 40 potato strips.
2. Grease a large cookie sheet or shallow roasting pan with nonstick cooking spray or 1/2 tablespoon of oil. Place the potatoes on the greased sheet, cut-side up, being careful not to let them touch. (Use two cookie sheets, if needed.) Sprinkle with the salt, pepper, and paprika and lightly coat with cooking spray or drizzle with remaining tablespoon of oil.
3. Bake for 25 to 30 minutes, or until tender on the inside and golden brown and crispy outside.
